I’m approaching my three year vegan anniversary! Goodness, gracious. If you asked me ten years ago, I never would have thought I would have taken this path. Pre vegan, my diet was largely fast food, red meat and everything fried. Post vegan my diet is some fast food and fried goodness but also filled with so many ingredients and flavors I would never have explored.
Let me take you back to three years ago. I had just eaten a Culver’s burger and concrete mixer and was rushing to my pedicure appointment. While there I put in my headphones and started watching beauty blogger videos on YouTube. I came across @carlibel post about why she went vegan. She layered in @garyyourofsky “Best Speech Ever” and I was hooked. He perfectly laid out biological facts, sustainability issues & then the mistreatment of animals.
Done. Cold turkey. Pun intended.
And then I researched like mad to see what contained animal ingredients and what didn’t.
I think what shocked me most were the lies we are all told, and how corrupt this world is. We are kept in this cycle of eat meat, drink milk, take an antacid to quell your body from the dis-ease it feels. If you watch fifteen minutes of television you can attest to being sold red meat, cheese, ice cream and then four medications to bandage up what your diet has caused. Rarely do you see a commercial for fresh produce. Ask yourself with the cycle above, who wins? Big drug companies. Politicians. Big Ag. But not the consumer & not the animals. We are fed lies on the daily, and until I started researching, I couldn’t see past the ads.
Remember you can still eat like crap in any lifestyle you choose. That said, choose the one that will benefit you the most.

Today I woke up craving simple ingredients with a complex, full bodied taste. Instantly, I thought of @hodgesbendmn avocado toast. It’s anything but simple!
They layer thick toast with creamy avocados, blistered tomatoes, toasted quinoa and a sprinkle of sea salt.
It’s enough to fill you up and while you’re there try the espresso cocktail in my previous post👌🏼 What are your weekend plans?
Is that even a saying anymore?! Anyway, I thought this pretty drannnk from @martinarestaurant could brighten your day. With the weather starting to get nicer it has me dreamin’ of patios and relaxing balmy nights with J. We leave for Vegas next week so I guess I will get to live out my dream in a few sleeps.

I don’t know about you but I’m feelin’ myself. The older I get, the more I appreciate who I am and how far I’ve come.
Skin starts to get thinner (that’s real life 🙄), wrinkles start to show up in places you didn’t think could wrinkle (wtf!) and you start to question if you’re now “too old” to do certain things.
I also give less fucks than ever before about being “cool” and I think that undoubtedly makes me more cool. Oh, you slip and fall in front of a group of strangers? Get up and act like nothing ever happened. I planned that bitch! 😉 But seriously, who gives a hootie tootie? Everyone is human!
Let’s talk about mental health for a second. I’ve lived my entire life with some intense anxiety & type A perfectionism. Nothing is good enough if it isn’t perfect. Yes - I put this in the present tense because it still gets the best of me. I’ve fought going on medication because I don’t want to be reliant on pharmaceutical alterations. This isn’t passing judgment on anyone who uses medication to level set themselves; this is me trying to explain my personal journey. I’ve started to take CBD oil when I feel an overwhelming sense of anxiety encroaching. It seems to help but I haven’t been as consistent as I could be. I’ve also tried to really recognize when I need a break. Take time for me, practice what makes me happy & f* the rest.
Just remember social media is platform. People all have struggles. And everyone is working through something. 😘
In Minnesota it is now virtually summer. We had. Fifty degree day yesterday and everyone is out in their shorts and laying on beach towels by the Lake formerly called Calhoun. Kidding about the beach towels, but Minnesotans take some nice weather seriously. Everyone was out!
I wouldn’t be surprised if a large percentage were going out for brunch this morning. What better way to cure a hangover than with the hair of the dog? I have the perfect little gem for you! This creamy, frothy goodness is called the Wake Up Call. Aptly named, right? It is smooth espresso layered with rye whiskey, curaçao, maple, vanilla & chocolate, shaken to perfection by @hodgesbendmn amazing bartenders and poured into a glass you can both sip or guzzle from 😉 We order these with the avocado toast (see previous post) and start our day with a bang. *to note, you can (& should) order this whether it is Sunday Funday or not.

BIBIMBAP [spicy] [v, ve, gf]
a moto-i twist on a korean style rice bowl. Charred mock duck, ginger garlic fried rice, pickled red onion, scallion, mushroom, & gochujang.
I’m going out on a limb here but this is the best mock duck I have EVER had. Why you ask? One word. Char. Perfectly small morsels, marinated to perfection with crispy, blackened edges. If that wasn’t enough, look at that bowl!! @motoisake has some fantastic, labeled vegan options! Their drinks are also fantastic!

As Spring is trying to edge her way in, I’m reflecting on the past season. This winter has been tenuous with the snow, ice, more snow, and lastly, more snow. My first choice of activity in this weather is to nest. Stay home, work on the house, read books, & snuggle. Summers are so go, go, go and it’s nice to take a break.
We’ve also spent a lot of time trying new food, coffee shops and perusing vintage gems.
I fear we still have so much to do before the nice weather begins! Then hiking, biking and adventuring begins 👙
In April we will be visiting Las Vegas and in May, Chicago. We still have to map out our larger trip for the year...any suggestions?

|Something Old, Something New|
As winter continues to grace us with snow, bitter cold, and now rain & ice, all you can do is laugh. As I curse the Ice Dam gods, I have to marvel in the way I see my reflection drop off each dagger that is sure to impale the snow mound below.
With three pups, a house and a small Nokomis yard that can’t hold any more snow, I’m ready for winter to be over. I do however love how winter encourages you to nest. Spending time indoors with my loved ones, cuddling with a good book and drinking a proper tea.
We enjoyed a date day last weekend, starting at @martinarestaurant . Their vegan brunch menu was a little disappointing in comparison to their dinner menu, but we made it work. I mean, who wants salad for brunch 🤷🏻♀️ These potato churros were fried and crispy on the outside with a warm, soft center. The tactile chew is fantastic. They also taste pretty good 😉
Where are some of your favorite hidden gems?
Sometimes you just want to eat a meal that feels hearty, dense. This Minnesnowta weather has me craving carbs and my pj’s. Being I can’t wear my pj’s to every meal, I might as well eat something carbs!
This is the biscuits and gravy from @groundswell_mn . Vegan garlic-herb biscuits topped with savory mushroom gravy & pea shoots. We ordered this with the French Toast and did an even split of sweet & savory. 👌🏼 What have you been doing to push past the winter blues?

I’ve been spotty with my IG posts lately, and I’m not mad about it. #sorrynotsorry 🤪 I am trying to focus on less screen time and more on being present. Instagram also likes to sell me everything under the sun, and I’m a damn sucker, so my wallet is happy. Hehe 😜
This all said, I wanted to say thank you for a warm welcome back! The love I’ve received on the last two posts was overwhelming. My IG family is so amazing, and I’m grateful for every one of you!

Okay so yesterday I served up something sweet, so it only felt right to give you something savory today 😘
There’s just something so pretty about all of @figfarro dishes. The light is perfect to take pics and their presentation is 👌🏼 This is their Biscuits + Gravy. House baked buttermilk biscuits smothered in southern style mushroom & jalapeño gravy, topped with plant based sausage.
Ay yi yi! All the plant based goodness in a breakfast that most would think could only be non-vegan! We are continuing to re-write the script and I’m incredibly proud to live in Minneapolis where plant based options are becoming a must have on any menu. Keep it up friends 👏🏼 What’s your favorite savory breakfast food/restaurant?

This is the Banana Bread French Toast from @groundswell_mn . They pan fry banana bread top it with banana slices, berries, toasted pecans & a coconut milk chocolate ganache. It’s sweet but great for a sweet tooth or on the side of a savory main.
