Summer has started off with a hot and humid bang. I’m a temperate weather kinda of lady - give me sunny and 75 and I’m all good. Needless to say, we’ve enjoyed a number of delicious cocktails and food while enjoying the beautiful nights. This is one of my favorite dishes - you can pick it up over at @haihaimpls 😘
Hanoi Sticky Rice with Mung bean, fried shallot, pickled veggies, cucumber in nuoc cham and mock duck. If you are hungry, pair it with the Salt & Pepper Fried Tofu (omg!) and a glass of the lychee sangria. So good! Jess says the Vietnamese Crepe isn’t foolin’ around either with the texture variety and fresh herbs 🙌🏼 What’s your fave patio food?
|Feeling the Love| 💕
This human has taught me patience (trying 😉) and to reflect before activation. They’ve taught me grace, love and how to validate someone’s feelings. They understand that everyone is a work in progress.
Jess is that Sunday kind of love. A slow morning with a cup of coffee, a walk through a cascading green, tropical greenhouse, and then a drive through the neighborhood. She’s my favorite kind of love 💗

|Chicago & Coney Island?|🌭
I mean, really? A place you can get both a vegan Chicago dog (& all the fixins’) as well as a Coney with vegan chili?! Holy smokes, I died and went to heaven! I admit, the name of this neighborhood had me skeptical (@flubadubchubhotdogs ) I don’t know what it is about the word chub that just doesn’t sit right with me...ANYWAY... it was more than worth the Lyft!
Flub A Dub Chub is the most neighborhoody, hole in the wall joint that all vegans hope they have options at. The service is warm and inviting, you get to walk down to garden level (instant urban cool), and the dogs were amazing!
We will never go to Chicago without stopping by here; put it on your list! Where is your fave joint to get a vegan dog?

Hiya, did you miss me?! Life has taken us on a whirlwind the last few weeks and I’m just catching up on my posts!
If this meal doesn’t prove that veganism has no bounds, I don’t know what will!
@thechicagohouseofza makes their own seitan & cheese in house! They perfectly bake the stuffed crust, cheese and fixins’ to a golden brown and melty goodness. They are family owned and operated with a beautiful location in Chicago. They also have their beer & wine license, so bring on the drankssssss!

You know when you meet someone and you’re like, “damn, they see me.” Like really, really SEE me. They see all of my intentions, my dreams, my flaws, my heart, kind of see me? It’s both a lovely and very vulnerable spot to be. I feel so lucky that J leads with grace, tact and with an approach to understand. Growth flourishing in a space of love is the best environment to thrive in, even if it isn’t easy 💗

Oh hi, ya miss me? We are coming out of our nest and adventuring once again! Last night was the @reverie_mpls Mobile Kitchen and damnnnn they didn’t disappoint. It was something worth waiting all year for.
We ordered the Smoked Gouda Mac & Cheese, Cauliflower Tacos, Bacon Fried Tempeh KBLT, & the Beignets. And you know what? Every item was perfectly curated with balanced flavors, great textures & better than their non vegan dupes. Ay yi yi!

|Chick’n & Waffles, Anyone?|
I bet you’ve wondered where I’ve been? Well I was in last Vegas from Tuesday to Sunday the week before last and last week I’ve been catching up on emails and house work. No instagram for me!
I did eat some phenomenal food while in Vegas. We stopped at @themodernvegan and had the Chicken & Waffles as well as the Steak & Eggs. Both were 👌🏼 In fact, I’m laying in bed writing this and craving those mashed potatoes hiding under waffle 😉
What have you been up to? New food trucks? New breakfast spots?
I’m approaching my three year vegan anniversary! Goodness, gracious. If you asked me ten years ago, I never would have thought I would have taken this path. Pre vegan, my diet was largely fast food, red meat and everything fried. Post vegan my diet is some fast food and fried goodness but also filled with so many ingredients and flavors I would never have explored.
Let me take you back to three years ago. I had just eaten a Culver’s burger and concrete mixer and was rushing to my pedicure appointment. While there I put in my headphones and started watching beauty blogger videos on YouTube. I came across @carlibel post about why she went vegan. She layered in @garyyourofsky “Best Speech Ever” and I was hooked. He perfectly laid out biological facts, sustainability issues & then the mistreatment of animals.
Done. Cold turkey. Pun intended.
And then I researched like mad to see what contained animal ingredients and what didn’t.
I think what shocked me most were the lies we are all told, and how corrupt this world is. We are kept in this cycle of eat meat, drink milk, take an antacid to quell your body from the dis-ease it feels. If you watch fifteen minutes of television you can attest to being sold red meat, cheese, ice cream and then four medications to bandage up what your diet has caused. Rarely do you see a commercial for fresh produce. Ask yourself with the cycle above, who wins? Big drug companies. Politicians. Big Ag. But not the consumer & not the animals. We are fed lies on the daily, and until I started researching, I couldn’t see past the ads.
Remember you can still eat like crap in any lifestyle you choose. That said, choose the one that will benefit you the most.
Do yourself a favor and watch @garyyourofsky The Best Speech Ever; it is on YouTube. It changed my life in so many ways for the better. I can’t even begin to describe how much better I feel! Cheers to 3 years & many more!🍾
Today I woke up craving simple ingredients with a complex, full bodied taste. Instantly, I thought of @hodgesbendmn avocado toast. It’s anything but simple!
They layer thick toast with creamy avocados, blistered tomatoes, toasted quinoa and a sprinkle of sea salt.
It’s enough to fill you up and while you’re there try the espresso cocktail in my previous post👌🏼 What are your weekend plans?
Is that even a saying anymore?! Anyway, I thought this pretty drannnk from @martinarestaurant could brighten your day. With the weather starting to get nicer it has me dreamin’ of patios and relaxing balmy nights with J. We leave for Vegas next week so I guess I will get to live out my dream in a few sleeps.

I don’t know about you but I’m feelin’ myself. The older I get, the more I appreciate who I am and how far I’ve come.
Skin starts to get thinner (that’s real life 🙄), wrinkles start to show up in places you didn’t think could wrinkle (wtf!) and you start to question if you’re now “too old” to do certain things.
I also give less fucks than ever before about being “cool” and I think that undoubtedly makes me more cool. Oh, you slip and fall in front of a group of strangers? Get up and act like nothing ever happened. I planned that bitch! 😉 But seriously, who gives a hootie tootie? Everyone is human!
Let’s talk about mental health for a second. I’ve lived my entire life with some intense anxiety & type A perfectionism. Nothing is good enough if it isn’t perfect. Yes - I put this in the present tense because it still gets the best of me. I’ve fought going on medication because I don’t want to be reliant on pharmaceutical alterations. This isn’t passing judgment on anyone who uses medication to level set themselves; this is me trying to explain my personal journey. I’ve started to take CBD oil when I feel an overwhelming sense of anxiety encroaching. It seems to help but I haven’t been as consistent as I could be. I’ve also tried to really recognize when I need a break. Take time for me, practice what makes me happy & f* the rest.
Just remember social media is platform. People all have struggles. And everyone is working through something. 😘
In Minnesota it is now virtually summer. We had. Fifty degree day yesterday and everyone is out in their shorts and laying on beach towels by the Lake formerly called Calhoun. Kidding about the beach towels, but Minnesotans take some nice weather seriously. Everyone was out!
I wouldn’t be surprised if a large percentage were going out for brunch this morning. What better way to cure a hangover than with the hair of the dog? I have the perfect little gem for you! This creamy, frothy goodness is called the Wake Up Call. Aptly named, right? It is smooth espresso layered with rye whiskey, curaçao, maple, vanilla & chocolate, shaken to perfection by @hodgesbendmn amazing bartenders and poured into a glass you can both sip or guzzle from 😉 We order these with the avocado toast (see previous post) and start our day with a bang. *to note, you can (& should) order this whether it is Sunday Funday or not.
